Christmas Cookies: Snowballs

snowball cookies

Growing up we lived next-door to the best baker in the whole neighborhood. A few days before Christmas she would come over with a giant, delicious dish filled with the best cookies I’ve ever tasted. Snowball cookies were some of my favorite on her plate, but funny enough I had never tried to recreate the recipe! This year I want to make my own plate of cookies and figured it was worth a shot. Luckily enough, I finally figured out the perfect recipe and I thought you guys might like it as well!

Snowball Cookies

  • 1 cup salted butter, soft
  • 1 cup confectioners sugar
  • 1 tspn vanilla
  • 2 1/4 cups all purpose flour
  • 1 cup chopped walnuts (or pecans!)

  1. Preheat the oven to 350 degrees and let your butter sit out to soften
  2. Cream butter with 1/2 cup confectioners sugar
  3. Mix in vanilla
  4. Slowly add in flour and nuts
  5. Use a tablespoon to scoop out cookies and roll into a ball. Place on an ungreased cookie sheet
  6. Bake for ~15 minutes - do not overcook!
  7. While still hot, roll cookies in leftover confetioners sugar. Allow cookies to cool and roll them again.

My cookie plate this year will include these snowballs, my favorite M&M cookies, maybe some white chocolate, macadamia nut, cranberry cookies… and a few others I’ll be sharing this week. What cookies will you be hoping to see?
