Accidental Cookie Crumb Ice Cream Topper

Guys- I accidentally fell upon the absolute BEST ice cream topper in the world this weekend!

It all started when Dean and my dad were craving something sweet after a nice dinner. Earlier in the week I had made some cookie bars and for some reason I thought I bought enough for a second batch. Because I sometimes make questionable decisions, I started melting the butter and measuring out graham crackers before I realized that I had forgotten to buy a second can of condensed milk! Luckily, I don’t give up easily.  I made up the following recipe, crushed everything up and VOILA! A new house favorite was born.

Cookie Crumb Ice Cream Topper

Ingredients

  • 1/2 stick of butter
  • 3/4 cup of graham cracker crumbs
  • 1/2 cup of peanut butter
  • 1 cup of coconut flakes
  • 1/2 cup of chocolate chips
  • 1/2 cup of white chocolate chips

Instructions

  1. Preheat oven to 350 degrees and completely melt butter in a 9x9 pan
  2. Combine melted butter and graham cracker crumbs and evenly spread mixture on the bottom of your pan
  3. Melt peanut butter and evenly pour over top of the graham cracker base
  4. Mix coconut flakes, chocolate chips and white chocolate chips and evenly spread the combination over top of the peanut butter
  5. Lightly press everything down together and bake for 15-20 minutes
  6. When baking is complete, wait for your creation to cool and break it all up with a spoon (it should easily turn into crumbles)
  7. Pour over your favorite ice cream and enjoy!

This stuff is so good that I’m pretty sure we all snuck small bowls of the topper alone! I can’t sing it’s praises enough- you gotta try it!

Thirsty Thursday: Matthew Berry Smoothie -a healthy breakfast smoothie

Is it just me or does today feel like a Friday? I hate Thursday’s that feel like a Friday! It’s just mean. Anyway, if you’re looking to make your Thursday just a little bit better, I have a nice smoothie recipe for you.  Every so often Dean will make me a smoothie to take to work and things just seem 10x better. This recipe in particular is a go to for us.

Frozen Matthew Berry– a mixed berry breakfast smoothie

  • 8-10 oz water
  • 3-4 ice cubes
  • 3/4 cup mixed berries (we used a frozen bag of strawberries, blackberries, blueberries & raspberries)
  • 1 scoop protein powder (Dean the Trainer recommends vanilla whey protein from Optimum Nutrition)
  • Optional: 1 tbsp peanut butter

This smoothie would also be healthy post-workout option. Other healthy options? The Blind Melon of course!

Thirsty Thursday: will.i.amaretto

will.i.amaretto: amaretto, coke, vanilla In full disclosure, I tend to stay away from sweet drinks. My stomach usually thanks me for that, but every so often I have to cave for some Disaronno and milk. It’s soooo good, but it’s definitely a bit heavier than I’d like. I decided to try something a little different today to balance out the sweetness of amaretto but still satisfy my amaretto craving. will.i.amaretto: amaretto, coke, vanilla

  • 1/2 can of diet coke (or regular coke, I just had diet on hand)
  • 1 shot of amaretto (I used my favorite: Disaronno)
  • 1/8 tsp vanilla extract

Just mix everything up and pour over ice. will.i.amaretto: amaretto, coke, vanilla   PS- Can I interest you in another drink? Perhaps a Grenadine Martin or maybe a Strawberry Manilow? Even more options available here!

Thirsty Thursday: Grenadine Martin

This is the easiest drink of my new Thirsty Thursday crew so far. I’m a big believer in cucumber vodka in the summer. It’s light and wonderful and it goes with a lot more than people think. We’re sticking with something simple today, you just shake everything up and pour out the greatness.

Grenadine Martin: a cucumber. vodka recipe

Grenadine Martin

  • 1 part cucumber vodka
  • 3 parts lemonade
  • heavy splash of grenadine
  • pinch of sugar
  • lime wedge for garnish

Just throw everything into a shaker, mix it up and pour over ice. Garnish with a wedge of lime and enjoy!

Thirsty Thursday: Blind Melon

Getting back into working out is hard. Getting to enjoy extra shakes & snacks afterward? Yep- I’m okay with that! Typically I drink some chocolate milk, have a little bowl of a healthy cereal/granola or steal a spoonful of peanut butter…. but sometimes I want something different. Enter: watermelon.

Dean the trainer said that watermelon is a great post-workout snack because it is hydrating, replenishes your electrolytes and glycogen, and it can help prevent muscle soreness . Some studies even show that watermelon can help your future workout performance! Yes and yes.

To save myself from having to do too much work after yesterday’s run, I cut and froze all of the watermelon ahead of time.  All I had to do was throw everything in the blender when I got home. Easy enough for me!

Blind Melon: a watermelon & lime cooler

Ingredients

  • 2.5 cups frozen watermelon chunks (seedless)
  • 3 tbsp yogurt (I used vanilla but I think strawberry would have been great, too!)
  • 1/4 lime, squeezed
  • ~5 mint leaves

Instructions

  1. crush mint leaves
  2. Add crushed mint, watermelon, yogurt and lime juice into blender and pulse until smooth
  3. garnish with an extra lime wedge and/or mint leaves
