Yesterday I promised you a new drink recipe and so I’m here today to deliver on that promise. I came up with this recipe the other day after buying more pineapple chunks than I could actually eat in a short period of time. So out came the blender and I started poking around my fridge for something that could compliment one of my favorite summer fruits.
Pineapple Crush- the perfect summer smoothie
3/4 cup pineapple chunks
1/2 cup orange juice
1/2 cup strawberry yogurt
1/4 cup of white chocolate chips/shavings
1/2 cup ice
Optional: Add a shot of rum to add a little kick!
All you have to do is throw all of your ingredients in a blender and blend until smooth. Who knew something so good could be so easy? I highly suggest bringing this drink out during your next outdoor summer meal. I promise it will be a hit!
South Florida is REALLY into brunch- okay, a lot of places are really into brunch. I guess the correct way to start this post is to say that I’m only recently getting into brunch. I’ve always loved breakfast (specifically waffles and whipped creme a la Leslie Knope) but getting dressed and heading out for a few hours on my precious Sunday just never felt like the right thing to do. South Florida brunches have really changed the game for me, though. The sun is shining, DJ’s are spinning tunes, people keep offering me bottomless mimosas and the waffles pretty much ALWAYS come with whipped cream. You win, brunch.
So with Mother’s Day less than 2 weeks away, I thought it might be fun to round up some cute and simple recipes that may help you put together your own little brunch in honor of your favorite lady next weekend. Just pick one thing from each category to have a more personal meal or go crazy and make a little of everything!
Is it just me or does today feel like a Friday? I hate Thursday’s that feel like a Friday! It’s just mean. Anyway, if you’re looking to make your Thursday just a little bit better, I have a nice smoothie recipe for you. Every so often Dean will make me a smoothie to take to work and things just seem 10x better. This recipe in particular is a go to for us.
Frozen Matthew Berry– a mixed berry breakfast smoothie
8-10 oz water
3-4 ice cubes
3/4 cup mixed berries (we used a frozen bag of strawberries, blackberries, blueberries & raspberries)
1 scoop protein powder (Dean the Trainer recommends vanilla whey protein from Optimum Nutrition)
Optional: 1 tbsp peanut butter
This smoothie would also be healthy post-workout option. Other healthy options? The Blind Melon of course!
In full disclosure, I tend to stay away from sweet drinks. My stomach usually thanks me for that, but every so often I have to cave for some Disaronno and milk. It’s soooo good, but it’s definitely a bit heavier than I’d like. I decided to try something a little different today to balance out the sweetness of amaretto but still satisfy my amaretto craving.
1/2 can of diet coke (or regular coke, I just had diet on hand)
1 shot of amaretto (I used my favorite: Disaronno)
This is the easiest drink of my new Thirsty Thursday crew so far. I’m a big believer in cucumber vodka in the summer. It’s light and wonderful and it goes with a lot more than people think. We’re sticking with something simple today, you just shake everything up and pour out the greatness.
1 part cucumber vodka
3 parts lemonade
heavy splash of grenadine
pinch of sugar
lime wedge for garnish
Just throw everything into a shaker, mix it up and pour over ice. Garnish with a wedge of lime and enjoy!
